The Story

Named for Russian ballerina Anna Pavlova during her 1926 tour of Australasia, this dessert is a graceful contradiction — crisp on the outside, cloudlike within. Both New Zealand and Australia claim its invention, but Koko sides firmly with neither, preferring instead to focus on the rosewater cream and jewel-like pomegranate seeds that make it sing.
